The Perfect Lattice Crust

At my first glance of a lattice crust I thought it was far too complicated to actually execute. However, several youtube tutorials later, vuala! Not as complicated as I thought. Several pie experiments later, I’ve developed a sure fire method for a perfectly uniform lattice.  Below are necessary supplies and step-by-step instructions to complete your own lattice crust for any delicious pie you make.

Supplies:

  • Flour for dusting
  • Rolling Pin
  • Pizza Cutter
  • Ruller (mine is metal and about 1″ in width, but any should do that is the width of lattice pieces you desire)

Step 1:

Lightly flour your surface. Roll out dough you intend to use for your top crust to approximately 1/8″ thickness (or really whatever thickness you like)

Step 2:

Lay your ruler on the far edge of your dough (I suggest starting on the opposite edge from your dominate hand for ease of tool use). Take your pizza or dough cutter and cut following along the edge of your ruler.

Step 3:

Repeat cutting lattice pieces using ruler as a guide for thickness to make pieces as uniform as possible.

Step 4:

Lay the first ribbon of dough on the edge of your pie.

Step 5:

Lay your second piece perpendicular to your first piece on the bottom edge.

Step 6:

Laying the rest of your pieces is just like weaving a basket. I like to think in my head “under, over, under, over” of how the pieces should look. In the pictures below you can see as the crust continues needing to pull back every over with each new piece and then returning in down…I hope I make sense…if not hopefully the pictures are.

And tada! By the last piece it should look something like this.

Step 7:

Cut the extra top dough from edges leaving approximately 1/2″ hangover.

Step 8:

Tuck in hanging over edge pieces under and rest in body of pie.

Step 9:

Fold bottom crust upward to incorporate top edges. Basically roll and smoosh together. Then create your pie edge with whatever design you like.

Step 10:

Brush on a little egg wash, maybe dust with a little sugar if you like, bake, and we did it! Also, pie maker beware- with the open pockets the lattice creates upset/hot pie contents can bubble out like the apples in the image below. I haven’t figured out how to prevent this to maintain aesthetics but it tastes delicious so I’m not too worried about it. But there you have it! The perfect sure fire lattice for any pie occasion 🙂
